Frittata Egg Muffins (Meal Prep)

Breakfast - it’s been deemed the “most important meal of the day” the king of all meals, the most worthy of your time and attention - yet, nearly a quarter of Americans skip breakfast daily!! (According to the authors of a letter to the editor of the American Journal of Clinical Nutrition)

Especially as a high school athlete, or the parent of a high school athlete, you know how important breakfast can be for your performance. But finding a high-protein, high-quality, on-the-go breakfast that’s not super processed or super expensive is a struggle! Making and consuming this breakfast in under 5 minutes is nearly impossible - unless you’re having a smoothie and let’s be honest, those get OLD.

Lucky for you, I have a solution!! In this post, I’m going to share a cheap & easy recipe for frittata egg muffins! We’re not reinventing the wheel here, but just offering additional ways to consume a high-powered breakfast in under 5 minutes!


Frittata Egg Muffins are awesome because they’re totally customizable. Depending on what you, or your picky eater, prefer for breakfast, you can alter the frittata to meet your desires!

A healthy breakfast doesn’t have to be bland!! You can add cheese, veggies, meat, and spices and have a wonderful meal! I love this recipe because it’s an amazing way to pack servings of vegetables into your meal. Did you know that we should strive to consume 3-5 servings of vegetables every day? Think about how often you consume veggies in your day. Consuming two of these frittatas could help you achieve one of those servings!!

Making your own breakfast is obviously ideal, but during those times when you don’t even have the energy to prep a meal, I have another solution for you! Frittata Egg Muffins (Easy Meal Prep)

(Makes 6 servings)

Ingredients:

  • 6 eggs

  • ½ tsp salt

  • ¾ cup chopped spinach

  • ½ cup diced red bell pepper

  • 8 cherry tomatoes

  • 2.5 oz shredded cheese

  • Oil spray

  • Chopped ham (optional)

Directions:

  1. Preheat oven to 350°F

  2. Spray a standard nonstick muffin pan with oil spray

  3. Whisk eggs, salt & pepper, and vegetables together.

  4. Divide the mixture evenly in a standard muffin tin. 

  5. Bake for about 20 minutes or until the tops of egg muffins are golden brown.

  6. Serve or allow to cool and store in the fridge (for 3-4 days) or in the freezer (for 3 months)

    To Reheat Once Frozen: microwave for ~2 minutes
